Ich habe eine Eiertarte nach Hongkonger Art gemacht, gefüllt mit saftiger Füllung auf knusprigem Tortenpapier.

Es wird gesagt, dass ungesüßte Kondensmilch in authentischen Eierkuchen nach Hongkonger Art verwendet wird, aber es ist schwer zu bekommen, also habe ich es mit Milch gemacht.

Ich habe das Tortenpapier zuerst mit dem Boden geröstet, dann mit Füllung gefüllt und weiter gebacken, sodass ich denke, dass ich eine Torte machen kann, die knuspriger ist und eine köstliche Röstfarbe hat.

Wenn Sie es aus dem Ofen nehmen, sollte der mittlere Teil leicht zerknittert sein, damit Sie das weiche und feuchte Gefühl richtig spüren können.

Eierkuchen nach portugiesischer Art haben eine knusprige Textur, aber Eierkuchen nach Hongkonger Art haben eine Kekstextur, daher denke ich, dass es eine leichtere und angenehmere Torte ist.

INGREDIENTES

  • 80g de manteiga sem sal
  • 30g de Açúcar
  • 1g de sal
  • 1 gema de ovo
  • 10g de Leite
  • 140g de farinha de bolo
  • 20g de amido de milho
  • 110g de ovo
  • 2g de pasta de baunilha
  • 40g de Açúcar
  • 110g de água
  • 80g de Leite

MODO DE PREPARO

  1. Derreta a manteiga à temperatura ambiente, adicione o açúcar e o sal e bata até ficar brilhante, depois adicione a gema de ovo e misture.
  2. Acrescente o leite e misture, acrescente a farinha mole e o amido de milho, misture bem com as mãos, forme uma bola, embrulhe em filme plástico e deixe descansar na geladeira por cerca de 30 minutos.
  3. Adicione o açúcar e a pasta de baunilha ao ovo, misture bem, adicione o leite e a água, misture, peneire, tampe e leve à geladeira.
  4. Retire o papel vegetal da geladeira, divida-o em 8 partes iguais (cerca de 35g cada), coloque em uma forma, pressione com as mãos e retire as bordas com uma faca.
  5. Coloque um copinho de papel manteiga por cima, coloque uma pedra de prensar e asse por 15 minutos em forno a 180 graus, retire a pedra de prensar e despeje 90% do recheio.
  6. Asse no forno a 180 graus por 20-25 minutos, e quando a parte central estiver ligeiramente quebradiça, retire do forno e deixe esfriar por cerca de 10 minutos.
  7. Retire-o com cuidado do quadro. (Se não sair facilmente, levante suavemente a borda com uma faca e enrole-a com a mão)
